RECIPE: Cilantro Lime Noodles

We treat ourselves with rice (my husband’s favorite) or noodle (my favorite) dishes on Saturday nights.  So when it was my turn to pick, I looked in my trusty Pinterest recipe board for some inspiration and found this gem.

Ingredients:

10 oz dry noodles of choice (2 servings) I used tri-colored spiral noodles

20 shrimp, shelled & deveined

2 tsp curry powder

1 tbsp chili powder , optional for extra spice

Cilantro Lime Sauce

1 cup chopped fresh cilantro, see notes

6 cloves garlic , minced

1 small shallot or red onion

2 tbsp sugar

½ cup oil, I used olive oil

4 tbsp oyster sauce

2 tbsp dark soy sauce

4 tbsp lime juice j

Directions:

1. Cook the noodles until al dente, drain and rinse with cold water to stop cooking.

2. Meanwhile, toss shrimp curry and chili and curry powder.  Heat 2 tablespoons of oil in a deep pan and add seasoned shrimp, shallot, and garlic.  Cook until shrimp is pink on both sides.

3. In a bowl, mix lime sauce ingredients together. So they are well integrated. 

4. Add noodles and sauce to the deep pan with the shrimp.  Mix well.  Cook until noodles are at preferred level of doneness.
